An EHO will want to see that you have records in place to help with your Food Hygiene Rating, great records make all the difference.
And as much as we hope you never need the records for a claim they will be the first item that will be requested by insurers to prove due diligence.
Due diligence is a defence that can be used in a court of law that you took all reasonable precautions to ensure the incident didn’t happen.
In most instances you can only use due diligence as a defence if you can supply records.
That’s where the diaries come in to play.
